Smashed Stuffed Potatoes

I know I'm not the first person to invent this. However, when I made it as a side dish for my grandmother's roast she was serving for dinner, it turned out to be the belle of the ball.

Ingredients:

  • 3 lbs. yukon gold potatoes (or other small, thin-skinned potatoes)
  • 1 bunch scallions, chopped
  • about 8 slices bacon, crumbled
  • 6-8 oz. sharp cheddar cheese, grated

Scrub potatoes and chop each in half. Boil until soft enough to mash. Drain water and return potatoes to stove, just to keep pot warm. While mashing with a masher, whisk, spoon, etc., add other ingredients, starting with cheese (so it can melt). Be sure to all ingredients are dispersed throughout potatoes.
