Panini with Caramelized Onion, Pear, and Fontina

This is one of Rachel Ray's recipes, and might get my vote as the best thing I've ever made. Don't let the onion/pear combination scare you - it's delicious and goes perfectly together.
Tip: When I make panini, I use our George Foreman Grill - it works just like a sandwich press!

Ingredients:

  • 1 Tbsp olive oil, plus some to drizzle
  • 1 Tbsp butter
  • 1 medium onion, chopped
  • 8 thin slices crusty, chewy Italian bread
  • 1 lb. Fontina, shredded or sliced
  • 1 red skinned ripe pear, thinly sliced

Sautee onion 10-12 minutes in skillet with oil until caramel colored and soft.

Spread 1/4 of onions on each of 4 slices of bread. Top with a thin layer of Fontina. Add a thin layer of pears, more Fontina and the other slice of bread.

Drizzle with olive oil and press.
